This vegan chocolate cake came about somewhat accidentally. A little trick that bakers in the South use to get a rich, moist chocolate cake is to replace the usual eggs and oil with mayonnaise - Duke’s Mayonnaise, to be precise. But good luck getting Duke’s in the Netherlands! So, as we do, we started messing around in the kitchen, testing out different types of mayonnaise to see what gave us the best cake. We tried American mayo, Dutch mayo, even Japanese mayo! But the most rich, delicious cake came when we tried Jean Beton Absolutely Vegan Mayonnaise, and the rest was history.
